If you’ve been following my blog, you’ll know that around the new year I was diagnosed with a severe, non-celiac gluten allergy, which means that I had to make the switch to eating gluten-free foods, using gluten-free beauty products, and even ensuring my clothes aren’t made with gluten, which has been extremely difficult for me to adjust to. Being able to find gluten-free options when traveling and eating out has been such a blessing, and one of my favorite places to find gluten-free dishes is Noodles & Company! If you watch my Instagram stories, you’ll know that my husband and I eat there a couple of times each month, because not only do they have tons of gluten-free options (like my favorite zucchini noodles!) to make just about any dish gluten-free, and it’s always delicious, but the staff are always SO nice to me about it, unlike some places I’ve been where they act like I’m inconveniencing them with something I have no control over. Imagine my excitement when Noodles & Company reached out to me and asked me to help them celebrate National Zucchini Day, August 8th, with them! I LOVE their zucchini noodles aka zoodles, and I was super excited about this project, because I had no idea there was an entire day devoted to all things zucchini (which is my favorite vegetable!), and because I get to share one of my favorite things to eat with all of you!

I always feel so fancy eating zucchini noodles, because I know that they’re not easy to make, plus they’re jus so much fun to eat! My husband always teases me about ordering the “fancy noodles” aka zucchini noodles at Noodles & Company, but today I don’t have to pay extra for them! Normally you’d have to pay an upcharge of $0.75 when ordering zucchini noodles, but today only (August 8th), you don’t have to pay extra to live your best life and feel a little “extra”! Not only are zoodles fun to eat and super instragrammable, they’re perfect for people with gluten allergies like me, and they’re also a great way to cut calories if you’re watching what you eat! You can ask them to upgrade any of your favorite dishes to include zucchini noodles, so you can try a new take on whatever your favorite Noodles & Company dish is.
