Located on the ground floor of Four Seasons Hotel Seattle and named after Washington’s state bird, Goldfinch Tavern is reminiscent of watering holes of old, with a fresh, modern, Pacific Northwest twist. We enjoyed both dinner by the infinity pool via Goldfinch Tavern, as well as a beautiful brunch at therein dining room before heading back home to Michigan, and both meals were an absolute delight.

Goldfinch Tavern, located inside the Four Seasons Hotel Seattle, serves up some of the most inventive, refreshing, and nourishing meals in all of Washington. Dine inside their modern tavern, with its warm, inviting, caramel and gunmetal grey color scheme, or dine roof side next to the hotel’s infinity pool, with incredible views of the Seattle Great Wheel, Puget Sound, and the surrounding islands.
I ordered their Vegan Chia Seed Pudding with pumpkin seeds, agave syrup, fresh mint, blueberries, plum, pear, and raspberries, as well as their seasonal fruit platter, which was filled with three types of melon, and assortment of berries, and figs. While I almost never drink anything but water or tea, they had fresh pressed green juice, which I can never resist, and it tasted just like I make it at home, full of bright green celery, kale, and lemon. This was one of my favorite breakfast meals I’ve ever had. Everything was impeccably fresh, picked at peak ripeness, and bursting with flavor. I actually had a dream about this meal the other day -it was really that good!


My husband ordered their Belgian waffle that arrived topped with fresh seasonal berries, the same fruit platter I had, and fresh pressed orange juice, which was the best orange juice we’ve had in ages. He is something of a waffle connoisseur, and since I can’t eat gluten I have to trust that it was one of the best waffles he’s ever had. According to him, it was spongey and fluffy, perfectly moist, and had a luscious, light flavor.
At the behest of our waitress, who didn’t think the single waffle and fruit platter would be enough for Robin, he also ordered their salmon lox plate. It arrived with an everything bagel toasted to perfection, cream cheese, a beautiful stack of smoked salmon caught locally, as well as a few accoutrements such as capers, lettuce, onions, and tomato. Between these three things, my husband was perfectly prepared for the day ahead.
Later up on the infinity pool deck, we shared a drink that had a lemon twist in it, as well as a round ice cube with a purple orchid inside. As the ice cube melted, the edible flower opened up as though it was blooming brightly. Four Seasons Hotel Seattle makes their drinks STRONG so if you like your drinks with some kick to them, you will positively love this place. They really hit you hard with their pours!


We enjoyed their Hamachi Crudo with huckleberries, smoked trout roe, citrus segments, radish, aleppo pepper, and avocado paste. It was so full of flavor and so fresh, that I would have eaten just this for dinner!
The Beet and Dungeness Crab Salad was next on our dining tour, and it was absolutely out of this world. Featuring pickled beets in brilliant reddish purples and glowing oranges, watercress, gribiche sauce, and tarragon, plus a pile of fresh Dungeness crab on top, I wanted at once to eat it as quickly as I could, but I also wanted to savor the dish, so I had to really pace myself with this one. It was SO delicious!



Every meal we had not only photographed wonderfully, but much more importantly was positively exquisite. Whether or not you are a guest of the Four Seasons Hotel Seattle, you owe it to yourself to stop by, watch the sunset or sunrise over Puget Sound, and enjoy the incredible flavors and plating that feed all of the senses at Goldfinch Tavern.
